John Green
Director of Food & Beverage

Born in London, John Green moved to California as a teenager. After completing his business degree, he formed the UK-based consulting company Bar Biz. The reputation of his company exploded and, after numerous successful openings, John moved on to consulting for and operating restaurants and bars around the world.

Fast forward to today. John has amassed 20-plus years of hospitality experience in managing, designing, and consulting for restaurants, bars and hotels across the world. The host of Food Network's series On the Rocks opened Odds Bar + Bistro in 2024.

“I want Odds to be a staple for the Round Rock community,” he said in an interview with Eater's Gabrielle Pharms.

Chef Donnie Forehand is a seasoned culinary professional with a passion for fusing Texas cuisine with global flavors. With a career that spans some of Austin’s best restaurants, Chef Forehand has spent his life in the kitchen, crafting modern versions of classic dishes that push the boundaries of traditional Southern and Texan cooking.

A proud Austin resident since 2003, Chef Donnie is a recognized talent in the local culinary scene. In 2020, he took home the coveted title at the Austin Mac & Cheese Festival, further solidifying his reputation for creating unforgettable dishes. When he’s not in the kitchen, Chef Donnie can be found enjoying the vibrant live music scene that Austin is known for.

Matt Kloufetos
General Manager
Matt Kloufetos started as a server in the industry in 2005 right before attending college at Monmouth University in NJ. Throughout school he kept one foot in the industry moving up from serving to bartending and eventually shift management. When he graduated and started a career in finance and kept my bartending gig on the weekends but quickly decided he preferred the restaurant life.
 
He dove into front-of-house management and was interested in learning everything about the industry, so he asked to join the kitchen team to work his way up to kitchen management, knowing he would need to know everything about the business to be successful in the future. After several years with the same company, Matt was recruited to move to Austin to work for the Mandola family. He opened and operated their Cedar Park location for 7 years before joining the Odds team!
Aaron Hernandez is from El Paso, TX and began working in restaurants full-time in 2016 while living in Brooklyn, NY. Before joining the team at Odds, Aaron served as a manager at Mandola's Italian Kitchen, Lead Bartender at Gracia Mediterranean, and Bar Manager of Rosedale Kitchen and Bar.
 
In 2022, Aaron was a member of first B.A.R. 5 class (spirits and mixology) at the Culinary Institute of America in Hyde Park, NY. He is currently pursuing his Level 3 towards an eventual Master of Wine with WSET. He has been featured in several publications, most recently an original recipe in the second volume of "Texas Cocktails" by Nico Martini.
 
Aaron is thrilled to be Odds building the beverage program alongside bar expert John Green and his long-time managing partner, Matt Kloufetos.
